The asparagus season is short, so eat this juicy, sweet vegetable while you can – it was a delicacy in Greek and Roman times, and still tastes pretty good today. Asparagus with Hollandaise Sauce

Asparagus doesn’t need much messing about with. Try simply steaming it and dunking it into a bowl of buttery hollandaise sauce. Yummy!

Ingredients

3 egg yolks
200g butter
Cayenne pepper and salt

1 small jar sun-dried tomatoes, drained
30g parsley, chopped
30g basil, chopped
30g sage, chopped
30g rosemary, chopped
2 cloves garlic, minced
100g toasted breadcrumbs
olive oil
8 mackerel fillets
3 handfuls of mixed salad leaves
black pepper

Eton Mess

750g strawberries, washed and chopped
3tsp sugar
3tsp pomegranate juice
750ml double cream
4 meringues
